This is really yummy and everyone likes it. I like to use leftover rotisserie chicken. It gives it a really good flavor.
1 lb. chicken cut into chunks-or leftover chicken cut into bite-size pieces
1/2 onion-diced
2 cloves garlic-minced
1/4 cup butter
3 Tbsp. flour
28 oz. chicken broth-maybe more
small package baby carrots
3 celery stalks-chopped
3 or 4 potatoes-cubed
1 cup frozen peas
salt
pepper
thyme
parsley
Saute onions, celery and garlic until tender. Stir in flour and let it cook a it to get rid of the flour taste. Whisk in the chicken broth and bring to a boil. Add the chicken, carrots, potatoes and herbs then simmer 20-30 minutes until tender, but still a bit crisp. Add peas before you put it into pie pan. Bake according to pie crust instructions.
