Melt-Aways

My mom has been making these cookies for as long as I can remember.  The name says it all.  They really do melt in your mouth.  They are so easy, but they seem fancy.  Lizzie made them for school when they had to bring what they thought the food of the Greek gods should be.

1/2 lb. butter soft but not melted
1/3 cup powdered sugar
3/4 cup cornstarch
1 cup flour

Sift together the powdered sugar, cornstarch and flour into the butter.  Cream together well.  Roll into balls-about 1 tsp. per ball- and place on an ungreased cookie sheet.  Bake at 350 for 10 minutes, but watch carefully because you don't want them to brown at all.  Let rest a few minutes and then carefully remove them to a baking rack.

Icing
1-3 oz package of cream cheese at room temperature
1 tsp vanilla extract
1 cup powdered sugar

Cream together well and add some red food coloring to make the frosting pink.  Carefully put a dab of frosting on each cookie.  Handle the cookies carefully because they will be crumbly.
