This is a basic recipe we made while camping. We were beginners, so it had a few trouble spot, but now that we know what we're doing a little better, I think I would try it again. The great thing about it is you could add whatever to it.
A few Tbsp olive oil
2-3 onions sliced
3-4 boneless, skinless chicken breasts-cut into smallish bite-size pieces
3-4 potatoes, cut into bite-size pieces
2-3 carrots sliced thin
3-4 stalks of celery; sliced
2-3 bell peppers, sliced
3 cloves garlic
parsley, rosemary, oregano-be generous
Balsamic vinegar-a few shakes
salt and pepper-lots
Light 25-30 coals. While they are heating, prepare everything and put it into dutch oven. Stir well to distribute the garlic and spices. Make a ring of 10 coals and set dutch oven on top. Put 16-18 coals on top. Leave a few coals in the chimney and put about 10 more coals on those-so you can replenish coals during cooking time. Cook for 45 minutes to 1 hour, stirring every 15 minutes until chicken is done and veggies are tender.
