I've been trying some breakfast items I can make and freeze for later. They have been a big hit, and more filling than cereal. Here are some of the favorites.
Banana Pancakes- I made them, froze them quickly on a cookie sheet and put them in a freezer bag. Are they as good as fresh, no; but they are better than cold cereal, and they can be reheated in the toaster.
Egg Sandwiches- I baked the eggs in a muffin tin (a genius idea I found here) although I need to grease the muffin cups much better next time and take the eggs out promptly after removing them from the oven. Add a little grated cheese and some cooked bacon or a cooked sausage patty (or not). Freeze them in a single layer on a cookie sheet for about an hour and then wrap in plastic wrap and store in a ziploc bag. To re-heat, unwrap the plastic and wrap loosely with a paper towel. Heat for about two minutes in the microwave.
Breakfast Burritos-I sauteed some peppers and onions and a little breakfast sausage. Then I poured in the beaten eggs and scrambled until done and not at all runny. Added some chunky salsa. I wrapped them and froze them on a cookie sheet for about 1 hour. Then I wrapped them in plastic and put them all in a freezer bag. To reheat, unwrap and poke with a fork a couple of times. Place on a plate and loosely cover with the plastic wrap. Microwave for about 2 minutes. I'm going to try using western beans instead of sausage next time.
I have also made muffins and frozen them before I cooked them. You can then cook them according to the recipe, adding a couple of extra minutes.
This weekend I'm going to try freezing french toast.
