Banana Pancakes

These are so much more than ordinary pancakes with a mashed up banana.  Super yummy.

 2 cups whole wheat flour
 2 tablespoon white sugar
 4 teaspoons baking powder
1/2 teaspoon salt
1/2 tsp cinnamon
 2 eggs, beaten
 2 cups milk
 4 tablespoons applesauce
 3-4 ripe bananas, mashed
1 tsp vanilla
Combine dry ingredients. In a separate bowl, mix together wet ingredients. Stir flour mixture into banana mixture; batter will be slightly lumpy. Heat a lightly oiled griddle or frying pan over medium heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Cook until pancakes are golden brown on both sides; serve hot. They are dense, so it's better to cook them at a lower temperature for longer.
