Pouding Chomeur with Apples and Cinnamon

Pouding Chomeur is a traditional Quebecois dessert.  Translated is means poor man's pudding.  Think of it as sweet dumplings or a sort of cobbler and you'll have the right idea.  This is one of my favorite foods from my time in the Great White North.  We had this for our Opening Ceremonies Feast.

Ingredients:
Syrup:
1 1/2 c. brown sugar
1 1/2 c. water
3 Tbsp. butter
1/2 tsp. vanilla

Dough/batter:
3/4 c. sugar
3 Tbsp. butter
3/4 c. milk
pinch of salt
1 1/2 c. flour
2 t. baking powder
1/2 t. cinnamon
2 apples-peeled and cut into small pieces

Make the syrup by melting butter in a saucepan.  Add brown sugar and mix well.  Add water and vanilla and bring to a boil.

Meanwhile, make batter by creaming the butter and sugar.  In a separate bowl, combine flour, baking powder, salt, and cinnamon.  Add flour mixture and milk to creamed butter.  Stir until mixed, but don't over stir.  Gently fold in apples.

Pour syrup into 9x13 pan.  Drop dough into syrup by teaspoonfuls.  Bake at 350 for 30 minutes.

Serve warm.
